Once upon a time I got a little bit chub, so I joined Slimming World. I had never been to a ‘club’ before, well not since my Girl Guiding days, so I was a little apprehensive to say the least.

Well as time went on, I found the SW diet definitely suited my lifestyle and I lost just over 2 stone.

Fast forward a few months, I stopped attending the group and slipped into old habits. We then bought our first home, no-one tells you how hard it is to adult until this moment.

I found I was mirroring my parents shopping habits – the difference being they are feeding 5 mouths and I am catering for 2.

Needing to cut our wastage, I decided the best way was to batch cook soup when we had leftover, slightly wrinkly vegetables.

A few veggie soups later and I’m quite the soup fan, and they’re a surprisingly filling lunch. I have a little collection scribbled in notebooks so I’ll share them with you while everyone’s still on the January diet.

I’ve also decided to rejoin Slimming World for 2018 so I’ll let you know when they’re synned, healthy extras, free or sp. (If you don’t care you ignore that section.)


  • 4 carrots
  • 1 red onion
  • 1 parsnip
  • 150g red lentils
  • 1 vegetable stock cube
  • 1.5 pints water
  • Chilli flakes (optional)
  1. Peel and chop all the veggies up.
  2. Sweat onion in a tiny bit of water, till soft.
  3. Add carrots, parsnip, onions, stock cube & water to your pan.
  4. Bring to the boil.
  5. Then add your lentils & simmer until your parsnip and carrot are soft.
  6. Blend up till smooth and season to taste.
  7. Eat, or batch it up for the fridge/freezer.

We used chilli flakes for a kick but you could also use anything to your taste. Black pepper, a little bit of soft cheese swirled in… the options are endless. 🙂
